When Easter celebrations are over, I usually end up with loads and loads of chocolate.  So, this is the best time of the year to prepare these special chocolate threats using coco pops or rice krispies.

This is a very easy recipe and gives a special taste to the remnants of easter eggs.

Lamb Figolla

Easter is on its way , so its time for figolli.  The most common cut out shapes traditionally used for figolli are lamb, heart, duck and dove.  Today I decided to decorate a lamb shaped figolla.  Usually I prefer to decorate the figolli using milk or white chocolate, however royal icing is also widely used in Malta to decorate these almond biscuits.

Today I wanted to experiment a bit, so I decided to decorate my lamb figolla using royal icing bubble effect.  First I covered the figolla using white sugar paste, to give the figolla a smooth texture.  Then I created a hard consistent royal icing mixture and placed a series of dots next to each other keeping on the figolla, making sure to leave little space between each dot so that when the icing dot settles, the dots do not merge together.  Let the layer of icing dots dry for about 10 to 15 minutes and then add another layer of dots, until all blank spots have been filled.  I got this cool idea from the domesticsugar blog.  Finally I finished off my figolla using sugar paste flowers and butterflies.

Pork and apple pie

The two main ingredients in this pie, pork and apple, are traditionally combined in various recipes because the sweet apple flavor blends perfectly with the pork taste.  This recipes is very easy but has a significant amount of cooking time, however the end result is absolutely worth the wait.

Maltese lent delight

Kwarezimal are almond biscuits whose name is derived from the Italian word ‘quaresima’ meaning lent.  These Maltese biscuits were traditionally prepared during lent period i.e. the 40 days preceding Easter time.  My sister gave me this special recipe to prepare these biscuits.  Lent or no lent these biscuits are always good to eat 🙂

Soon it will be carnival time and all confectioneries in Malta will be filled up with this huge dome shaped sweet traditionally prepared during this period – the Prinjolata.   One can either buy a whole prinjolata or buy slices of this delicious sweet.

Every year my mother prepares this easy recipe and as a family we make an ‘effort’ to finish it off before lent begins 🙂

This time of the year its good for picnics, and what’s best to start off the picnic than a good dip.  My sister found this good recipe that blends the almond and the garlic together and forms a tasty dip.  At first I was weary hearing about the almonds mixed with garlic, however when I tasted the dip I have to admit that I fell in love with its taste 🙂

Homemade Baci

Today I have to confess that my favorite sin is … baci perugina.  During the christmas period I ate loads and loads of  baci, I absolutely like their hazelnut mixture covered with bitter dark chocolate complimenting the sweet mixture inside.  I also have to confess that I always look forward to read the love messages wrapped with the baci 🙂

I found an easy and no bake recipe and now I can create my own baci whenever I feel like it and I can embed my own love messages.

Mince pies galore

Since Christmas is on its way this weekend I had to do the mince pies.  I had so much fun preparing the recipe that I think I overdid it since I managed to bake 36 traditional mince pies and around 40 star shaped mince pies.  I’m sure they are not going to be wasted.  I packed them up 2 mince pies and 2 star shaped pies to give to my family and friends.
