Ricotta pie or better know by Maltese people as (torta tal-irkotta) is one of maltese favorite pies. It is very easy to prepare rich in ricotta and cheese.
Ingredients
500g puff pastry |
1000g fresh ricotta |
50 ml milk |
1 egg |
30 grams parmesan cheese |
30 grams cheddar cheese |
2 tablespoons cheese spread |
pinch nutmeg |
pinch salt |
pinch pepper |
Heat the oven to 160°C . Put the the ricotta in a medium sized bowl and beat it with a food processor or with a fork. Slowly pour in the milk and the beaten egg. Add nutmeg, salt, pepper and the cheese spread. Grate the Parmesan and the cheddar cheese and combine them to the ricotta mixture.
Grease a heat proof pan 23 x 30 cm with butter. Sprinkle the table surface with flour, and roll out 3 quarters of the pastry to use for the base of the pie. Line gently the pastry on the greased pan, do not remove the excessive pastry. Gently pour the ricotta in the baking dish and use a spoon to level the ricotta out.
Roll out the remaining pastry and place it on top of the pan. Roll the edges and using a fork to press the rolled egdges. Use a fork to poke the pastry lid. Place into the oven for about 45 minutes until the pastry turns golden brown.
