Christmas log is traditionally done during Christmas period by many Maltese families. It is an easy non baking recipe with a mixture of nuts, biscuit and condensed milk and covered with milk chocolate.
Ingredients
| 300 grams plain biscuit ( morning coffee or digestive biscuits) |
| 200 grams roasted almonds |
| 100 grams walnuts |
| 100 grams hazelnuts |
| 1 can sweetened condensed milk (400 grams) |
| 2 tablespoons whiskey |
| 50 grams candied cherries (optional) |
| 2 tablespoon butter |
| 150 grams milk chocolate |
Crush the biscuits, and chop the roasted nuts ( do nut crush the nuts) and chop the cherries. Mix the nuts and the biscuits in a large bowl.
Add the melted butter , brandy and the condensed milk to the mixture. Use a wooden spoon to combine the ingredients together, and then use your hands to press all the ingredients together and shape the mixture into an elongated form of about 24cm x 9cm x 5cm.
Store in the fridge overnight or at least 4 hours. When the log is firm and ready, get the log out of the fridge, and melt the chocolate. Use a food brush to cover the log. Use a fork to make some line to give texture to the Christmas log.
Let the chocolate dry and you can serve immediately or store in a cool place.
